Capstone Abstract
This capstone project focused on improving training and instructional methods in pediatric feeding for occupational therapy learners through two complementary initiatives. The first component involved developing a library of educational demonstration videos to support onboarding therapists completing the feeding competency at Cincinnati Children’s Hospital. During the capstone experience, forty-five videos were recorded, edited, and organized to illustrate key feeding concepts for infants and older children, including sensory and oral-motor interventions, food transitions, mealtime behaviors, and developmental feeding patterns. These curated videos were designed to increase standardization, efficiency, and confidence in therapist preparation.
The second component examined the effectiveness of two instructional strategies, including educational simulation videos and traditional teaching materials, for introducing the International Dysphagia Diet Standardization Initiative (IDDSI) Framework within a pediatric feeding lab for second-year occupational therapy students. Using a two-group, post-only design, participants received one instructional method before completing hands-on IDDSI practice. Survey results from 22 students showed that both groups demonstrated meaningful increases in perceived competence and confidence, with high levels of satisfaction across instructional methods. Although statistical analysis revealed no significant group differences, qualitative feedback highlighted the value of video demonstrations, hands-on practice, and clear instructional supports. Together, these initiatives highlight the role of multi-modal learning resources in strengthening clinical education and support the integration of video-based resources to enhance pediatric feeding instruction for occupational therapy practitioners.
